BIOCHEMICAL PARAMETERS OF RIPENESS AND ANTIOXIDANT ACTIVITY OF VITIS L. FRUITS CULTIVATED IN BREST

Abstract

The article presents the results of two-year studies of the content of soluble sugars, titrated acidity, ripeness index, content of phenolic compounds (PS) and antioxidant activity (AOA) of the juice of Vitis fruits of seven varieties: Alpha, Minskiy rozovyy, Saint Pepin, Valeria, Daria, Rudik and Senator Burdaka cultivated in Brest. The fruit maturity index was 15.03 – 23,76 relative units and was the highest in the Valeria table variety. The PS content was 448,36 – 942,92 mg of gallic acid per liter of juice, AOA (ABTS method) – 27,1 – 59,9 mmol of trolox equivalent per liter of juice. The highest values were for Saint Pepin and Rudic varieties. Recommendations on the practical use of the obtained results are given.
